Matt was formerly Head Chef at Simpsons, and won such accolades as Junior Sous Chef of the Year (2004) and Chef of the Year (2010).
In 2015 Matt established his own restaurant - Cheal’s of Henley-in-Arden, however, after 7 years the building was too small to cope with demand and Matt was unable to expand due to the limitations of its Grade II-listed status. So, when an opportunity arose for him to open a new fine dining establishment in 2023, he decided to take a leap of faith and set up a larger restaurant in Knowle.

We will begin our year in Cheltenham on Thursday 22 February at Michelin recommended Prithvi. The Cotswolds AGM will take place on April 24 at 1230pm prior to lunch.

The Montagu Arms has become a firm favourite for Wessex festive dinners. The 17th century building is no more enchanting than when decorated for Christmas. With three AA Rosettes, The Terrace Restaurant has a wonderful reputation under the leadership of Executive Chef, Nathan Eades who took the reins in the Spring of 2022. Nathan was head chef at The Wild Rabbit for four years and was before that head chef under Luke Tipping at the Michelin-starred Simpsons Restaurant in Birmingham. He also held a senior position at Lainston House. Nathan has designed an exquisite festive menu for us.
This will be a fabulous evening, as always, we look forward to seeing you there.

The delightful restaurant and courtyard of the Pallant House Gallery in the centre of Chichester. Using the very best produce from local suppliers, executive head chefs Rosie Brice creates original and seasonal dishes that showcase British classics with a continental European twist.
Pallant House is a splendid eighteenth century town house in the Georgian quarter of Chichester. The Restaurant is part of a tastefully designed modern annexe. This first post-lockdown dinner for the Bailliage was well attended and on arrival Canapes were presented of courgette rolls filled with red chilli, cream cheese, spring onion and chive, and crispy duck bon bons with pear compote. Both were quite delicious and were washed down with an Italian Ca’ del Console Prosecco Extra Dry.
Seated, the company was served Flaked Sussex smoked mackerel with beetroot, pea, pickled vegetables and a micro herb salad with an orange and burnt butter dressing. The contra flavours of mackerel and beetroot fused together extremely well and the dressing complemented both the vegetables and the salad. This clever starter dish was accompanied by an Argentinian white wine, Finca La Coronia Torrontes, Norton. The main was a fillet steak, cooked well on the outside but served pink, together with succulent potato dauphinoise and wilted baby spinach. Surrounding this ensemble was a warm and most wonderful wild mushroom diane sauce providing a flavour and memories of days gone by for some. Also from Argentina a quite full but clean tasted Malbec, Lo Tengo was served.
A chilled desert to follow; the chefs’ version of Italian Zabaglione flavoured with marsala, rhubarb and Sussex ginger crumb. A sweet and slightly piquant flavoured pot of indulgent creamy pudding indeed, to be consumed without pause, as proved the case for some here. An Italian Moscato d’Asti, Prunotto helped salve the palettes of those seeking an encore.
To round off an excellent evening, coffee, tea and infusions were served with petits fours.

Borthwick Castle, Gorebridge, Midlothian

Borthwick Castle is one of the finest and best preserved 15th century keeps in Scotland. An imposing fortress composed of a massive double tower surrounded by an embattled wall, it is much admired for the beauty of its proportions as well as the solidity and accuracy of its masonry. It is the culmination of a rich 600 year history which starts with its creator, Sir William de Borthwick, and continues through some of the most dramatic episodes in Scotland’s past. The castle sits on a knoll – the ‘Mote of Lochwart’ - at the centre of a small but well cultivated valley, well positioned to guard the road south to the Borders from Edinburgh. One of Borthwick Castle’s most striking features is a large gouge in the stonework of the East wall. Historians believe that this was created in 1650 by Oliver Cromwell as his Parliamentarian forces marched through Scotland en route to Edinburgh. The 10th Lord Borthwick was instructed by Cromwell to leave his castle, he refused, and the resultant damage from Cromwell’s canons can be seen to this day. As a result of this no member of the Borthwick family inhabited the castle until 1810 when J. Borthwick of Crookston bought it back.

We are delighted to present an unique event blending an English vineyard with true Punjabi cuisine.
Hambledon was the first commercial English vineyard, established in 1952, and has won many awards for their sparkling wines both in UK and internationally, beating many famous champagne houses in blind tastings. It is situated in the village of Hambledon, which is also the cradle of cricket that was founded here in 1750.
Sanjha, meaning “to share” in Punjabi, was started 10 years ago by Amarjot Singh Randhawa. Amarjot, a hotel management graduate from Chandigarh in Punjab India, is the proprietor and the creative chef behind opening the authentic Punjabi restaurant in Southampton. Ametsa with Arzak Instruction is a unique collaboration between Elena Arzak – voted Veuve Clicquot World’s Best Female Chef in 2012 – along with her father Juan Mari Arzak, and Mikel Sorazu, Igor Zalakain and Xabier Gutierrez. Arzak has held 3 Michelin stars for over 20 years.

This is our first Chaine event at Restaurant 56 and we look forward to a great Chilterns evening dining with Executive Head Chef Andrew Scott and his team. Andrew has spent his entire career in Michelin-starred kitchens, training initially at Mallory Court, Lords of the Manor and L’Enclume then moving on to the Curlew restaurant in East Sussex. Andrew hails from Banbury and marks a return to his home county of Oxfordshire at Restaurant 56. In 2014, he joined Sudbury House as Executive Head Chef - this exciting project included the opening of Restaurant 56, a modern fine dining concept housed in the hotel’s grade 2 listed building. Andrew and his team put the restaurant on the culinary map by gaining 3 AA Rosettes in just 18 months and winning Best Gastronomic Restaurant at the Oxfordshire Restaurant Awards for 2 years running. In 2016, Andrew achieved a life-long dream of taking part in the Great British Menu, representing the Central Region and winning many fans on his journey.

If there is one dish in the world that captures the true gourmet essence of La Chaîne des Rôtisseurs it is roast grouse. Not only does it relate to the origins of our Guild, when King Louis honoured the itinerant roasters of small birds by granting them a royal charter, but it is recognised throughout the gastronomic world as worthy of profound respect. It requires no trendy smoke machine, no dry ice embellishment or minute drops of coloured gel of exotic alchemy; it is complete in itself, plain roasted, accompanied perhaps with a little bread sauce or a few game chips, a rich jus and the finest red wine you can afford. Grouse is probably the last of the truly organic foods. Everything from venison, salmon, halibut, caviar to chicken, guineafowl and wagu beef is farmed these days but grouse cannot be; it is a wild creature of the upland moors. Some of the finest grouse habitat in the world is here in North Yorkshire. In the hands of an expert chef grouse has no equal and offers a dining experience of the highest order.

Time: 7.30 for 8pm Trading as an inn since 1740, the multi-million pound restoration in 2012 used décor and fittings appropriate to the building. The gardens, running down to the River Derwent, were also revived. The hotel is on Yorkersgate, the road into the historic market town – which claims to pre-date York by having a Roman fort in 71AD. Malton is currently working on becoming the Food Centre of Yorkshire and has already attracted several new food and drink-oriented businesses. The Executive Chef at the Talbot is James Martin, who was born in Malton and attended Malton School before beginning his training at Scarborough Technical College.

The Anglia Bailliage will be making an informal visit to Pisa from 27th to 29th March. We will have two informal dinners in Pisa, and an optional day trip by train to Lucca, where we will lunch in a Chaine restaurant. Some of us will be extending the visit to include the previous weekend, since the Pisans celebrate their New Year on 25th March, a tradition dating back to the times when the Pisan republic was a great naval power.

Continuing with what is becoming a tour of the London Clubs, as part of "hidden" London, we are delighted to announce that we will be dining at the RAC Club in Pall Mall, as guests of our newest quartet of professional members, the Director of the Club, the General Manager of the Epsom Clubhouse, the Food and Beverage Manager and, of course, the Chef, who have put together an excellent menu for us.

Surrey, boasts an award-winning menu, convivial
atmosphere and a bright, cheerful interior. The owners of The Inn @ West End are passionate about good food and wine, and the restaurant boasts its own vegetable patch. The kitchen, led by Lee Watts, uses seasonal produce to create The Inn’s sensational modern British menu. It has a diverse cellar leaning towards Portugal and Spain.
The Inn is open-plan, with bare boards, attractive modern prints on canary-yellow walls above a red dado, and a line of dining tables with crisp white linen over pale yellow table- cloths on the left. The bar counter - Fullers London Pride and a guest such as Exmoor Ale on hand pump and 30 malts - is quite a focus. There is a garden room, which in turn leads to a grape and clematis pergola-covered terrace and very pleasant garden.
Fresh fish and game are collected in their chilller van from wherever it is freshest and best. Much of the produce is sourced locally, and they have their own herb garden and they grow things like runner beans and tomatoes too.
The landlord is also a wine merchant, so the thoughtfully created food is well com- plemented by the knowledgeably chosen wines, several sherries and dessert wines that lean particularly towards Spain and Portugal. He holds wine tastings and can supply by the case.

We were honoured to have with us Chaîne Ambassador, Dr. Judith Mazza of Bethesda, Maryland, USA and her husband, who found time to stop off from their cruise to join us. Judy took this opportunity to present Tony Cox (London City Bailli) and Barbara Maw (London Bailli) with gifts and certificates. World Master Chef Brian Henry and his team delighted us with their culinary expertise, and one lucky guest won the opportunity to be part of the tasting panel for a forthcoming London City event.
