For their Chaine swansong they have come up trumps with a sensational five course tasting menu prepared by Executive Head Chef Viv and her brigade. It will be accompanied by a few of Cass’s favourite wines presented to us as a matched wine flight.
Viv came into cooking fairly late in life and is totally self-taught. She has had restaurants in Ealing, Emsworth and France and is still remembered locally for 36 on the Quay in Emsworth – where she was awarded their first Michelin star. While her cooking is solidly based on French classic cuisine, she embraces many modern cooking techniques. Her dishes are produced using the finest local ingredients.
Cassons is featured in Michelin Guide and other UK restaurant guides as well as being rated the ‘top fine dining restaurant’ in Chichester on TripAdvisor. I am very much looking forward to seeing you there and to sharing this slightly sad occasion with you.
