Velouté of Garden Squashes Parmesan and Truffle, Seed Lavoch
Seared Scallop, Dashi, Spinach Hand-dived off the North Coasts, scallops don’t get any better: served with the earthy flavours of seaweed and dried shitake mushrooms, a real umami experience
Fillet of Belted Galloway Black treacle, foie gras, salt-baked roots, red wine sauce “Fair-To-Nature“ farmed beef from the Yorkshire Wolds, aged simply for 30 days (this is all it needs !). The addition of black treacle brings toffee notes and gives the fillet a little more texture. Clamped root vegetables from our garden are cooked in a salt crust, and the label rouge foie gras is simply caramelised on the plancha.
Selection of Cheeses Three great cheeses from the chef’s favourite producers, Ribblesdale, Montgomery, Lowna Dairy. Served with quince, sweet wine jelly and spelt crackers
Dark chocolate “Aero”, malt, milk, barley Aerated 70% single estate chocolate that melts in the mouth, served with flavours of malt, and crunch barley, and a milk ice cream that cuts the palette.
