From the outset, the Cambridge Distillery has always taken a different approach to the production of this historic spirit. Inspired by our semi-rural location, we create gins using fresh, locally-available botanicals, rather than simply following the same recipes as everybody else. By distilling each element individually, we are able to reach previously unattainable levels of quality.
Every single gin that we have commercially released has been awarded at least a gold medal at international competition – and we still produce every bottle by hand in our distillery just outside Cambridge.
We are also the world’s first gin tailors: we capture pure botanical distillates for blending to the individual specifications of each of our customers. Once you have determined your own precise recipe, we store it under your own file, ready to produce more for you whenever you – and only you – order it. The Nyetimber estate counts three major landmarks in its history. Its earliest beginnings saw it first recorded in the Domesday Book in 1086. Then there was the planting of the first vines, almost exactly 900 years later. Most recently, there was the decision in 2006 that Nyetimber wines deserved an audience on the world stage.
Nyetimber is in the fortunate position to own one hundred percent of our vineyards and all of our wines are produced from the 170 hectares we have planted at the best sites in West Sussex and Hampshire. Nyetimber’s vineyards were the first to be devoted exclusively to the holy trinity of Champagne grapes: chardonnay, pinot meunier and pinot noir.
A millennium might have passed since our name was coined as ‘Nitimbreha’, likely referring to a newly timbered house or perhaps a small timber plantation. But the most significant developments for this House have taken place in a single decade with our winemaking team among the most proficient in the world.
Ridgeview Wine Estate
The story began in 1995, when Mike and Chris Roberts decided to realise a vision, nurtured for many years. With a love of England and a passion for wine, they investigated the English wine industry with a view to understanding the type of wine production they felt would thrive best in the cool climate of Southern England. Their research pointed towards traditional method sparkling wine made from the three classic varieties: Chardonnay, Pinot Noir and Pinot Meunier.
Nestled at the base of the beautiful South Downs with their chalky soils, the perfect site was found – the ridge with an unforgettable view. It was here the journey began. Whilst the vines were gently nurtured towards their first harvest, we were busy building a state-of-the-art winery. Ridgeview has one of England’s only bespoke underground sparkling wine cellars. Here, our wines are stored in perfect conditions to facilitate the all-important secondary fermentation and lees ageing process. This ensures the development of incredibly high quality, bottle fermented sparkling wines with the finest bubbles and a perfect mousse.
