At the Table: Amuse Bouche
Fishcake, saffron aioli, samphire
Christoph Bauer, Gruner Veltliner, Niederosttereich 2020 - Green apple, citrus and white peach on the palate with a subtle spritz. Like a delicious Sancerre without the floral notes.
Slow cooked lamb shoulder, truffle mash, salsa verde
lvio Tintero, Nebbiolo, Langhe, Piemonte 2020 - Bright red fruit but still with nice tannins that can easily handle an intense dish like the lamb with truffle mash. Nice leathery/smokey finish to compliment the dish well. Is a bit like a pinot noir, with tannins.
Caramel tart, sea salt, creme fraiche
Chateau Mignets, Semillon, Sauvignon Blanc, Sauterne, 2012
