Formerly Head Chef at Edinburgh’s Condita, where he retained the restaurant’s Michelin star, King will lead Knockinaam’s three AA Rosette restaurant with menus rooted in the rhythms of Galloway. Expect a seven-course tasting menu that changes frequently, guided by seasonal harvests, coastal catch and carefully chosen local suppliers, from wild venison and lamb to produce from the surrounding land and sea.

His cooking is set to reflect both place and precision: contemporary Scottish dishes with a strong sense of terroir, supported by an extensive wine list and optional pairings. Alongside dinner, King will introduce a three-course lunch, afternoon tea, Champagne afternoon tea and a relaxed lounge menu, each designed to evolve with the seasons.
