Passion Care and Attention to Detail

Our journey began on the Fountain Terrace and continued in the Garden Room of the Manor House with sun streaming through the windows. The service was seamless led by Claire Ratcliffe and Sommelier Manuel Ribeiro. Our guests included several “regulars “from neighbouring Bailliages, prospective members from our region and far-flung members from Sydney. We were also pleased to have Bailli Delugue Philip Evins in attendance, and this provided the perfect opportunity to recognise Executive Chef Rikki Weston and General Manager Susan Williams with promotions prior to the Sante. Passion, care, and attention to detail resounded throughout. A well rounded Pitnauer Gruner Vetliner accompanied red mullet tortellini highlighted by spiced citrus and bouilliabaise hollandaise. The tender Wiltshire lamb accompanied by Montes Alpha Pinot Noir counterpoised by a surprising lemon verbena pesto was a balanced pairing. Finally, textures and sweet flavours with a fresh closing note from the garden picked sweet woodruff and a red Moscato Fuimicicoli to draw out the raspberry notes. Guests lingered over coffee and petits fours understandably reluctant to leave behind the contemporary comforts of Whatley Manor.
